For the Powertec shoot two weekends ago, we had Frenchie athlete Julien Greaux as the anchor so I decided to make the catering as an ode to his heritage. I know, I like to pay attention to little details… it’s fun 🙂 I’m a foodie and having been on the healthy fitness diet for a while, I’ve come up with some modified recipes along the way.
You probably just have to get to the grocery store and pick up Tarragon since it’s somewhat uncommon in American kitchens. Tarragon is one of the base herbs in French cuisine and can be found in famous sauces such as Bearnaise, fish dishes, soups, etc.
Tarragon Dijon Chicken Breast Marinated in Red Wine Recipe
- 1 split boneless chicken breast
- 1 Tbsp dried Tarragon
- 1 cup cheap red wine (or a great way to use some leftover!)
- 1 Tbsp Dijon Mustard
Marinate the chicken breast in the red wine for 30 minutes. Set oven on bake for 350F. In a oven safe pan pour the marinated red wine and chicken breast. Spread the mustard all over the top and generously sprinkle the tarragon on the chicken. Bake for 30 min and drain the red wine before serving.
